Keto French Toast

Ingredients:
Bread:
4 Tablespoons Kerry Gold Butter
4 Eggs
1 Cup Almond flour
1 teaspoon of xanthan gum
1 Tablespoon Maple Extract
Coating:
2 Eggs
1/8 Heavy Whipping Cream
1 Teaspoon Ground Cinnamon
1 Tablespoon Maple Extract
Instructions:
First add melted butter to a medium mixing bowl. Next add eggs & 1 tablespoon of maple extract & whisk together. Then add 1 teaspoon of xanthan gum & slowly start mixing your Almond Flour. Continue mixing until all ingredients are well blended. Grease microwave safe rectangular Pyrex dish and pour the mixture into the dish. Microwave for approximately 7-8 minutes times may vary, but you want to be sure it is cooked all the way through. Remove from the microwave and cut into 8-9 slices, I also cut them in half so that they are easier to handle.
Coating: In a medium bowl add all the ingredients for the coating, mix well.
Procedure:
Heat your non-stick skillet on medium heat add Kerry Gold Butter or a cooking spray. Next drench the bread strips in the coating and place on your skillet. Cook all 4 sides until golden brown. Serve with butter & a keto friendly syrup (I prefer Walden Farms Maple Syrup)
Serve warm and enjoy!
